Cabbage Description.
The cabbage (Brassica oleracea var. capitata) is a leafy vegetable belonging to the Brassicaceae family. The biennial plant can grow up to 50 cm tall. It has a very compact growth habit and produces a round head made of overlapping, concave leaves that are dark green or reddish in color, lightening as they approach the center of the head (or “crown”). The shape of the head can vary: conical, elliptical, or flat.
Always present in kitchens worldwide for its versatility and taste, cabbage is marked by a sharp flavor when raw and a sweeter taste when cooked. Not only is cabbage an excellent ingredient for main courses, side dishes, and salads, but it is also a true health vegetable. It is rich in antioxidants, vitamins, fiber, iron, omega-3, and omega- 6 fatty acids. It has anti-inflammatory and anti-cancer properties, strengthens the immune system, and helps combat fatigue.
