Escarole Endive
Positive effects on eyes bones and teeth. Reduced risk of tumors.
Escarole Endive Description.
The escarole endive (Cichorium endivia latifolium) is a leafy vegetable belonging to the Asteraceae family. This variety is distinguished by its particularly pale and tender heart within its large, curly head.
Its crisp, bright green leaves are rich in water, vitamins (A, C, K), magnesium, and folic acid—nutrients that help reduce fatigue and contribute to normal energy metabolism. Regular consumption of escarole helps combat cholesterol and digestive issues.
Its slightly bitter flavor is highly appreciated in the kitchen, whether eaten raw or cooked.
Vivai Bacchetto sows escarole endive in the early spring months, harvesting it as late as November. (The final deliveries are intended for transplanting in the southernmost areas of Italy.)
The cultivation period is relatively long, given escarole’s lower sensitivity to premature flowering.
For seedlings, 170- and 228-cell trays are primarily used, with 260/280-cell trays occasionally employed.
